Pork tenderloin with modified Sweet Baby Ray's teriyaki......extra garlic, crushed red pepper flakes, toasted sesame seeds and a touch of smoked maple syrup.....

It was supposed to be something different. But I was missing soy sauce and this was close to the sauce I was gonna make anyway.

8 pounds of birria going in the oven. New supplier for chilies, this has potential.

3 hours tightly covered at 375 degrees. Now a half hour uncovered. Then I separate the meat from the remaining marinade which I will dilute and season to make broth and conserve the fat to fry tortillas. Won't be eating til tomorrow but damn this smells good.
