Long grain rice for risotto? That seems wrong.

"Arborio rice is high in amylopectin, a starch present in rice. Because it undergoes less milling than ordinary long-grain rice, arborio retains more of its natural starch content. Cooking the rice releases this starch, resulting in a firmer, chewier, and creamier rice compared to other kinds of rice."
Sorry I missed this. I've had some chicken and rice casseroles, made by my grandmother that were fabulous. I just bought a bag of Cal Rose to experiment and see if I could duplicate any of them. I wondered if you'd ever tried anything other then arborio. I've always considered risotto to be an upscale rice casserole.

To me risotto is a stovetop dish, rice with seasoning cooked in half a cup of stock at a time, constantly stirred until 6 cups of liquid is absorbed into one cup of rice. This brings that pectin out and makes the whole dish creamy. And with long grain rice, I don't think you get the same result. Biryani is a low and slow casserole type rice dish, but the rice remains fluffy and not stuck together. Calrose would be similar to the Kokuho Rose that's our staple. One cup of that cooked in our rice cooker would have half the volume of 1 cup of arborio cooked into risotto. I have never cooked arborio in a rice cooker. Now I'm curious.

I'm glad you like it. It took me awhile to find the most annoying update :) Actually they had a similar type issue a couple years back. But I'm not backing off the security upgrade. That's important. If XF doesn't come up with a solution. I'll look deeper.
 
I picked up some Maseca to make some corn tortillas and something tasted weird. So I bought some cal and some ocotillo field corn and last night nixtamalized a pot. Made tortillas for my charro beans and cheese to check. Maseca nixtamalization doesn't taste right, weird. Read online somewhere that they were doing a new spray process! It doesn't seem to release that same corn goodness. So now I need to either remember to do that the night before or pick up some masa made in store at Vallarta Supermarket. Why does everyone keep changing stuff on me! So confusing. Still nothing better then fresh corn tortillas, yum.

that could be rolled up with melted cheese and you would be well on your way to a tex mex enchilada.
