New food truck in town. The best one we've had, I've been stalking them around the state ever since they first showed up. Quesadillas the last time, empanadas today. And Salbutes, aka 'puffy tacos' are 2 divine bites each. I had never seen them before but they're great starters. Ordering online and pickup 4 blocks away is a bonus.

Looks a lot like.

I wouldn't describe Navajo taco dough as "light" as they are usually thick. Good for stacking on the toppings and usually the diameter of a soccer ball! Like anything deep fried, popular at the state fair.

My leftover empanada airfried to perfection. I do not know what made the black al pastor so black but I am not questioning the deliciousness thereof. The pickled onions are bomb.
